protein toppers Vitality Pesto

Makes about 5 servings

  • ½ cup frozen green peas, rinsed with water to thaw slightly
  • 2 cups fresh basil leaves
  • 2 tablespoons nutritional yeast
  • 1 package (about 1/3 cup) Vegetarian Traveler Toasted Bean Blend (tri soy medley)
  • 1 clove garlic
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon sea salt
  • 1/3 cup vegetable broth
  • Sea salt and freshly ground black pepper

Place the first 7 ingredients into a high-powered blender and pulse to combine; add broth to the mixture a little at a time and pulse to desired pesto consistency. Serve over gluten free pasta, about ¼ cup sauce to 1 cup cooked pasta. Garnish with a few whole peas and basil leaves.

Note: Leftover pesto can be stored in the fridge for 3 days, or frozen for up to 3 months. Add a thin film of oil to the top before storing to prevent pesto from turning brown.
