Toasted protein toppers Muesli

Makes about 6 servings

  • ½ cup gluten free rolled oats
  • ½ cup coconut flakes
  • 2 packages (about 2/3 cup) Vegetarian Traveler Toasted Bean Blend (pepita and soy-pea medley)
  • 1 cup freeze dried blueberries (or dried berries)
  • ¼ teaspoon each sea salt and cinnamon

Place oats and coconut in an ungreased skillet. Stir often over medium heat until golden brown. Allow to cool. Add the oats, coconut, Vegetarian Traveler, blueberries, salt, and cinnamon to a container or resealable plastic bag and shake to mix. Store for up to a month in pantry. Use as cold or hot cereal with plant-based milk, or use to top plant-based yogurt.
